looks like they have come up a bit since JB bought his because I know he didn't spend over $200.  Still not too bad for a little trailer.  I guess I have never been shopping for a trailer like that but it doesn't sound too bad.

Hehe, almost embarassed to post this but my favorite smoker is an old wall locker..... yes you heard right, a wall locker...... works great, it's cheap, and you never have issue with hanging most anything you wanna smoke......

I will try to get some pics up, of the current rig..... smoked everthing from venison to corn in that thing....


And so it begins... I expect nothing less than a full broadside with this.........

Hey sounds cool to me.  My family uses an old disc from a plow to make a Mexican dish called carnitas in.  And not the kind you get at the restaurant either.  So I am with you on using unorthodox things!

Now that's original... need pics!!  Makes, sense, smoke rises up through the tiers.  Problem is not portable huh?? ON the disc, I have one made out of a big rigs wheel!!  You know how to make carnitas?? that's the next dish at the next gtg bro, gotta see this!!

Hell yes I know how to make Carnitas.  My neighbors taught us how when we still lived in Garden City.  My dad is better than I am but I can make it happen. They are awesome.  I use chicken though because I don't like pork.  My dad makes both since he loves the pork.  That is how we were taught to cook them but we added the chicken later.  My mom likes the chicken better too.  If we are cooking those at a GTG I want to make sure there is water there to clean that disc off.  I don't want that grease all over my truck.  We were thinking of taking it tail gating at some point this year.  Maybe you can make that game!

I have the same Charbroil smoker...it really works well.I just got is in Aug for my B-day. I use it as a regular grill mostly but I start out by putting the meat in the smoker area close to the box. I find that the box gets too hot to really use as a grill. I have a pork shoulder that I want to smoke this weekend. Any suggestions?

oh also I always take hickory chips and soak them in water for about 1 hour and then put them on the coals.

I'm a novice bro, no pro by any means, but I have only been using apple and cherry wood since something about hickory taste reminds me of hot dogs and don't use mesquite as it gets bitter as it burns, great for open grilling but a no no for smoking (found out the hard way).  I think you'll like the taste of apple and or cherry smoke on your shoulder.  I also put a pan close to the opening by the firebox with apple juice and choice spices, onion and garlic so the steam can help keep everything moist!!

Thanks...I will see if I can't get some apple or cherry wood..as far as the pan, is it just a shallow pan with apple juice and cut up garlic, onion, pepper etc in it? How about cooking time? The shoulder is about 2.5 times the size of a softball..nothing real huge.
