As only GandyQ knows, I was given the daunting task of smoking 10 racks of baby backs 2 weekends ago and last weekend. Thanks to GandyQ and some pretty savvy instructions (suggestions) I was able to smoke them with no problem. Problem was I smoked them from 6PM through 5 in the morning, needless to say I was a tired boy. That's right, 11 hours for these bad boys. And I only had a regular side box smoker. Everyone that came into town that morning had a very very nice surprise waiting for them. Yep, hot off the grill ribs and other breakfast foodstuffs waiting for them upon their arrival. These bad boys had a wonderful crust but man, very juicy on the inside. Last weekend my bro in law and my wife had birthdays so they requested I make some more and they came out great also.
Now to the problem. I want something now that I can take with me wherever I go. Like a smoker on a trailer.........yep, saw prices today. Anyone good at welding?? I know I'll have to save up for a while but I actually enjoyed tooling around with the air and how much smoke to allow, etc. Now I know why GandyQ loves Q so much!! Until now I would only tool around with carne asada, maybe a chicken or two but not on a larger scale like the last couple of weeks.
Oh and sorry guys for being pretty much MIA the past few weeks. Boss has me on lockdown from the computer!~~
