04 fluid changes

Hey, new comer here.

I just bought a 04 Avalanche with 176k miles a few weeks ago, and I've started to go through changing out all the fluids and I've gotten to the Differentials and wanted to make sure I have the correct information as I've seen alot of mixed info all over the place.

The rear dif is using 75w-90 gear oil and the front is using 80w-90 correct? And I'm not supposed to fill it till it over flows? Or is that not a big issue?
And for the rear dif gasket replacement, Am I supposed to put RTV gasket maker on it? I see every one do it with alot of people saying not to put it on with the gasket.

Also after changing the oil, the pressure gauge is showing 60 while driving when cold with spikes at 80 when accelerating . And when warm its sits around 40-60 with spikes near 80 with hard accelerating. Is that normal? I think I recall the pressure being a bit lower before the change.

2004 avalanche 1500 z71 4x4 if the extra info is required
