A Little Bozo's History

Thomas Jefferson "Bozo" Williams started cooking pork shoulders for the public in Mason back in 1923. ?Bozo's is hard by the highway, where its big green sign makes it easy to spot. The restaurant has been in the same location for 50 years. ?The restaurant seats 95 people at 19 tables and 13 stools at the lunch counter, which offers a view of the busy kitchen. ?The wood-paneled walls are decorated with photographs from Bozo's past. ? The atmosphere is inviting, and the waitstaff is friendly, but it's the smell emanating from the kitchen that makes you feel you've arrived in hog heaven. ? The barbecue at Bozo's has been cooked in the same fashion for nearly 80 years. The restaurant has two pits out back, which are divided into the "cook" side and the "warm" side. Tuesday through Saturday at 8 a.m., 40 fresh, unseasoned pork shoulders are loaded on the cook side over charcoal that is kept at about 200 degrees. At 3 p.m., the shoulders are turned over and then taken off the fire at 8 p.m. and put in a cooler overnight. ? The next day, the cooked shoulders, in batches of 10, are placed on the warm side at 8 a.m. and are ready by 10:30 a.m. to be taken off the fire and pulled and chopped to order. ?Bozo's is unusual in that it offers its customers a choice of barbecue options. The white meat is shredded, moist, and tender. The brown meat, from the outside of the shoulder is chewy, crispy even, with lots of smoky flavor. You can go with either one, but the menu recommends a combination of the two. ?The meat comes unsauced, but Bozo's has three homemade sauces that come highly recommended. The hot sauce which is unchanged since the 1960s, is vinegar-based, with plenty of pepper and other, secret, spices. ?The mild sauce has been around for 20 years and is sweet with a tomato base. And a medium sauce, which is slightly sweet with a bit of pepper.

I didn't know you'd been setting something up.
I'm interested and I think this would be a pretty good weekend for both me and my wife. We're only about 2 1/2 hours from Memphis. I've been kicking around the idea of starting a Middle Tennessee Chapter, but just can't seem to get the interest around here. I've been tagging nearly every AV I see, but I don't know that any have joined.
Anyway, I followed your link and signed up. Keep me up do date.

for those SAVANNAH GTG AVers,but you will have FUN.

You should make the trek to Memphis and get the good BBQ ;D The more the merr....better the pics look !!!
 
Been there done that and it's the best BBQ known to me. I guess PF about half way for all unless you start
from West Memphis. I'm sure will find something spicey
and something bottled in PF.

Never let planetav near a river. He......well......can't say here.

BBQ...sounds good to me...it's not too far from PF...heck we got 2 weeks. >:D

MISS JUDY before your next post.

We may need a third driver.

I do believe that by using super-super-slow exposure
you,planetav and myself in Pigeon Forge,Tn could be included in the same picture with any and all Texas AVers attending your " BBQ " GTG. I mean,all this will take place in same state.....RIGHT! :rolleyes:

Ok Ed - get some solid info together - start a confirmation list on the front page of who and how many are coming and set up an itenerary of what and where and when. Where and when are we meeting and what are we doing and a map of the area, hotels in the area and so on for your locals and visitors from out of town or state. I will need to know more on this before I can commit to coming- is this a hooters trip and thats it or what?

It's almost 500 miles so approx. 7hours
I'll find out about a hotel...

As much as I & As I and planetav want to meet you and ED,its impossible at this time. As for NATIONALS; Yes but driving time want fit MISS JUDYS availible vacation days. I would feel out of place without our AV.:cry: :cry: Time will tell. :rolleyes:

Great job on setting this up - (y) first page is done well. I am still planning on coming at this time. ;) Is there a good place to stay ?

It's been awhile I've been in Memphis...
